The ultimate Eton mess

For the pink meringues:

  • 3 x large egg whites
  • 175 g powdered sugar
  • 1 tbsp freeze-dried raspberries (mashed)
  • Pink food coloring

For the strawberry sauce:

  • 225 g strawberries (peeled and roughly chopped)
  • 150 g fresh raspberries
  • 75 g powdered sugar

For the confusion:

  • 500 g strawberries, raspberries and blueberries
  • 600ml double cream
  • 200ml Baileys Eton Mess
  • Freeze-dried raspberries (crushed)
  • Fresh mint (finely grated)


  1. Preheat oven to 12°C, fan oven 100°C, gas ½. Line a baking sheet with parchment paper. In a large mixing bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, spoon by spoon, beating well after each addition until you have a stiff and glossy meringue.
  2. Place one-third of the meringue in another bowl and mix in the freeze-dried raspberries and enough pink coloring until pink. Then fold in the white meringue until just marbled. Put blobs of the mixture on the baking paper and bake on the lowest shelf of the oven for 2 hours until the meringues are very hard. To let it cool down.
  3. For the strawberry sauce, use an immersion blender to puree the strawberries and raspberries until pureed. Place in a pan with the powdered sugar and simmer until slightly reduced and syrupy, 2-3 minutes. To let it cool down. Slice or halve the juicy strawberries, depending on their size. Break the meringues into rough chunks.
  4. Pour 25ml Baileys Eton Mess into 4 glasses for each serving. Then layer with whipped cream, berries, meringue and strawberry puree. Drizzle another 25ml of Bailey Eton Mess on top. Baileys introduces the new Eton Mess flavored drink, ideal for summer
