A quick and nutritious alternative to what you might have tried to order on a Friday night, this delicious recipe is a real family favorite. This recipe is very mild and suitable for the whole family, but of course you can add some fresh chili with garlic and onions for some spice.
Easy chicken curry
• 1 large onion diced
• 2 gloves crushed garlic
• 2 tablespoons mild curry powder
• 1 tablespoon flour (can be used gluten-free)
• 1 small jar of mango chutney (Sharwoods brand)
• 1 tablespoon tomato puree
• 1 can of chopped tomatoes
• 2 pints reduced-salt chicken broth
Lightly sauté the onion and garlic with a tablespoon of canola oil in a saucepan for 5 minutes or until tender, stir in the curry powder, flour and tomato puree and cook over low heat to form a paste, 5 minutes.
Slowly stir in the warm chicken broth, chopped tomatoes, then add the jar of mango chutney and season to taste. Cook for 15-20 minutes
Add cooked chicken or beef and serve with steamed rice.
Tip: Add a can of Thai Gold Coconut Milk, it will be creamy and use Thai Gold Organic Rice.
For vegetarians, use vegetable broth and add freshly cooked veggies like green beans, carrots, baby corn, and broccoli.
