I’ve spent most of my summer perfecting my dream pizza dough. If you’ve had a really good one, you know what I’m talking about: thin base with swollen, charred crusts, just a small amount of really good tomato sauce and proper mozzarella cheese. Done right, it’s a lesson in simplicity and quality ingredients.

But making it at home as a pizza beginner takes time, practice, and tons of patience. Over the years I’ve cooked many different types of pizza, all decent but certainly nowhere near what the pros put out. Determined to correct this mistake, we received a pizza oven from last year ilforno.ie And I didn’t know what rabbit hole I was going down. From the required wood (I use ash-kiln dried from mulch.ie), getting and maintaining the right temperature for baking the pies and then of course the actual recipe for the dough.
