Ivan Orkin brings a new ramen concept to Brighton’s Shelter Hall

A new ramen concept will be unveiled in Brighton next month by a TV star and Japanese food expert.

Ivan Orkin will debut the Ivan Mazemen ramen experience in the UK at the Shelter Hall in Brighton on 10th February in partnership with Sessions, the food brand franchisor and food hall operator.

Orkin, who is running for a 12-week stint in the city, has curated a menu showcasing his signature dishes served at his internationally acclaimed ramen shops in Japan and New York, and in his starring role in the Netflix series “Chef’s Table” was shown in 2017.

He is also starting a four-week residency at the Neighborhood in Islington on February 9th.

The “Ramen Junkie” is widely recognized as the American authority on ramen and all things Japanese cuisine.

Fluent in Japanese, he first fell in love with Japan and its cuisine after working at a sushi shop in his hometown at the age of 15.

His chain of restaurants, Ivan Ramen, has become one of the best places to eat ramen in Tokyo.

More ramen shops in Japan followed, and in 2012 he returned to New York with plans to open there.

He soon opened two new locations, the Ivan Ramen Slurp Shop and his US flagship Ivan Ramen, which is still operating today, followed by his first cookbook in 2013.

Mazemen is a broth-free ramen that’s a staple on Ivan Ramen’s menus in Tokyo and New York.

The menu features dishes such as triple chicken mazemen with triple garlic (consisting of fresh garlic, roasted garlic, garlic oil, paitan broth, chicken), katsu curry mazemen (panko breaded chicken breast, Japanese curry, thick rye noodles, various fukujinzuki), cold Sesame Noodles (Refrigerated Szechuan Chicken, Roasted Peppers, Pickled Chili, Coriander).

“It has been a dream of mine for a while to launch in the UK,” said Orkin.

“The ramen scene in London is particularly exciting and I can’t wait to introduce my labyrinth dishes to a new slurping audience. Partnering with Sessions for residencies at their venues is the perfect way to launch Ivan Mazemen in the UK.”
