“Since carbonated water is carbonated, it naturally aerates the dough,” explains Chris Sanders, hydration specialist at Radnor Hills Infusions.

He added: “The bubbly water stays frothy longer, so when the substance is exposed to heat, it forms tiny bubbles in the heat mixture to create fluffy pancakes.”

To prepare the dough for the softest pancakes, put one cup of homemade flour, 2½ teaspoons salt, and 5 tablespoons carbonated water in a bowl.

Next, whisk this mixture until smooth and then gradually stir in ½ cup milk of your choice.

Then let the dough cover for 20 minutes – the dough should have a fairly thick consistency. This batter is enough for four servings of soft, spongy pancakes.
