Star Chef Creates Beef Pie and Haggis to Celebrate Saint Andrew’s Day

A top Scottish chef has created a special cake to celebrate St Andrew’s Day.

ary Maclean, winner of Masterchef: The Professionals in 2016, created her special St Andrew’s Pie as part of a campaign to raise the profile of Scotland’s Independence Day.

He created the pie that combines Scotch beef and haggis, as part of an ongoing campaign led by Glasgow’s Kestrel Brewing Company to revive the holy day.

He hopes it will become a signature dish in households, bars and restaurants on this day.

The cake takes about an hour to prepare and is the main course on a three-course menu for Saint Andrew’s Day designed by Mr Maclean.

The starter is a one-pan winter vegetable dish with roasted Scottish roots, kale, pearl barley and pickled shallots; while the dessert is an easy custard tart with luscious cream.

“Burns Night has haggis, tatties and neeps,” said the chef. It’s time for our National Day to have our own dish.

“I love a good steak, but I wanted to make it even more Scottish, so I decided to add haggis, which gives a real rich flavor without overpowering the dish.

“It’s easy, comforting and a great winter dish that everyone can gather around the table at home or in a pub or restaurant.

“In these difficult times, it is more important than ever that we all stand together. St Andrew’s Day is a great time to celebrate both friends and family and our Scottish heritage.

“The time has come for us to have a celebration worthy of our patron saint and I hope this St Andrew’s Pie can help.”

Kestrel has estimated that Scottish supermarkets and the hospitality industry would lose up to £40m if St Andrew’s Day were not made more of a celebration.

Nigel McNally, CEO of Kestrel Brewing Company, said: “St Andrew’s Day is often passed as a non-event, which is a huge shame for a very proud nation. , but also a missed opportunity for people to come together and show how great modern Scotland is and what it means to be Scots.”
