So when we spot it as part of the breakfast menu at Aidan McGrath and Kate Sweeney’s Michelin-starred ‘Dining Pub’ in Lisdoonvarna, there’s no question whether we’ll order it or not. McGrath makes his version with Gruyère—at the Savoy, the cheese is Parmesan—and serves it flat and glazed. It’s as decadent as it sounds, a classic dish in keeping with the food style we enjoyed at dinner the night before.
